Wild Berry Yoghurt Hotcakes
Makes 15
Ingredients
- 1 cup self-raising flour
- 1 cup Liddells Lactose Free Long Life Low Fat Milk
- 1 egg
- 1 teaspoon vanilla essence
- 2 x 200g tubs Liddells Lactose Free Wild Berry Yoghurt
- cooking oil spray
- 1/2 cup sliced strawberries
- fresh berries, for serving
Method
- Place flour in a large bowl and make a well in the centre.
- Whisk milk, egg, vanilla and 1 tub yoghurt together then stir into the flour to make a smooth batter. Stir in strawberries.
- Spray a heated non-stick frypan with oil and cook 1/4 cup of hotcake mixture until bubbles form around the edges. Turn over and cook on the other side until golden. Repeat with remaining mixture.
- Serve topped with remaining yoghurt and berries.
Additional Information
- Add 2 teaspoons caster sugar to the mixture if you like your hotcakes a little sweeter.
- For extra fun, make hotcakes in the shape of your children’s first initial.
- For a different flavour, substitute strawberries with sliced banana or frozen mixed berries.
