Method

  1. Place flour in a large bowl and make a well in the centre.
  2. Whisk milk, egg, vanilla and 1 tub yoghurt together then stir into the flour to make a smooth batter. Stir in strawberries.
  3. Spray a heated non-stick frypan with oil and cook 1/4 cup of hotcake mixture until bubbles form around the edges. Turn over and cook on the other side until golden. Repeat with remaining mixture.
  4. Serve topped with remaining yoghurt and berries.

Additional Information

  • Add 2 teaspoons caster sugar to the mixture if you like your hotcakes a little sweeter.
  • For extra fun, make hotcakes in the shape of your children’s first initial.
  • For a different flavour, substitute strawberries with sliced banana or frozen mixed berries.
