Baked Atlantic Salmon in Caper Mustard Cream
Serves 5
Ingredients
- 5 x 150g Atlantic salmon fillet portions
- 1 x 250ml carton Liddells Lactose Free Thickened Lite Long Life Cream
- 1/4 cup freshly snipped chives
- 2 teaspoons finely grated lemon rind
- 2 tablespoons lemon juice
- 1 tablespoon chopped capers
- 1 1/2 tablespoons wholegrain mustard
Method
1. Place salmon in an overproof dish and pour over combined cream, chives, lemon rind and juice, capers and mustard.
2. Bake at 200°C for 10 minutes and serve warm with salad or steamed vegetables.
Additional Information
Try caper mustard cream in other dishes. Brown chicken fillets with red capsicums, transfer to an ovenproof dish, pour over cream mixture, sprinkle with fresh herbs and bake until golden and cooked.
Layer sliced potatoes and bacon in an ovenproof dish. Pour over cream mixture, sprinkle with grated Devondale Organic Tasty Cheddar Cheese* and bake until tender.
*Devondale Organic Tasty Cheddar Cheese is low in lactose, if you are highly sensitive the cheese can be omitted from this recipe.
