Scalloped Potatoes with Caramelised Onions
Serves 4-6
Ingredients
- 1 brown onion, thinly sliced
- 1 tablespoon brown sugar
- salt and freshly ground black pepper, to taste
- 2 teaspoons olive oil
- 400g waxy potatoes, peeled and thinly sliced
- 400g kumara, peeled and thinly sliced
- 1 1/2 cups grated Devondale Organic Tasty Cheddar Cheese*
- 1x 250mL carton Liddells Lactose Free Thickened Lite Long Life Cream
Method
- Saute onion, sugar and seasonings in oil over medium heat for 5 minutes, until soft and translucent.
- Layer half the potatoes and sweet potatoes in a 2 litre capacity baking dish, top with onions, half the cheese and half the cream, season to taste. Repeat with remaining ingredients, sprinkle with paprika.
- Cover dish with foil and bake at 200°C for 30 minutes, remove foil and bake for a further 30 minutes until potatoes are tender and browned. Stand for 10 minutes before cutting.
Additional Information
*Devondale Organic Tasty Cheddar Cheese is low in lactose, it can be ommited from this recipe if desired.
