Creamy Tuna and Spinach Pasta
Makes 4
Ingredients
- 400g macaroni pasta
- olive oil spray
- 1 small red onion, thinly sliced
- 1 clove garlic, crushed
- 2 teaspoons cornflour
- 2 x 250mL cartons Liddells Lactose Free Thickened Lite Long Life Cream
- 425g can tuna, drained
- 80g baby spinach leaves
- 1/2 cup basil leaves, roughly chopped
- 1/4 cup finely grated Devondale Organic Tasty Cheddar Cheese*, for serving (optional)
Method
- Cook pasta in rapidly boiling water until al dente, drain.
- Lightly spray oil in a saucepan, add onion and garlic and cook until tender. Combine cornflour and 1/4 cup cream to form a smooth paste, add to saucepan with remaining cream and bring to a gentle simmer.
- Stir in tuna, spinach, basil and pasta and heat through. Serve topped with cheese, if desired.
Additional Information
*Devondale Organic Tasty Cheddar Cheese contains very little lactose, try adding a little to this pasta for serving if you can tolerate it.
