Serves 6

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup plain flour
  • 750mL Liddells Lactose Free Long Life Milk
  • 2 spring onions, finely sliced
  • 1 zucchini, grated
  • 1 small carrot, peeled and grated
  • 1/2 red capsicum, finely diced
  • 1 cup grated Devondale Organic Tasty Cheddar Cheese
  • 200g (1 3/4 cups) small shell pasta, cooked until al dente
  • 425g can tuna, drained
  • 1/4 cup roughly chopped flat leaf parsley
  • 1 teaspoon finely grated lemon rind
  • freshly ground salt and pepper, to taste
  • 200g Turkish bread
  • 1/3 cup grated Devondale Organic Tasty Cheddar Cheese*
  • crisp green salad, for serving

Method

  1. Heat oil in a large saucepan over medium heat, add flour and stir continuosly for 1 minute. Whisk in milk and continue stirring until thickened.
  2. Add vegetables and simmer for 1 minute. Remove from heat and stir in the grated cheddar, pasta, tuna, parsley, lemon rind and seasonings. Pour into a 2 litre capacity baking dish.
  3. Roughly chop the bread to make chunky breadcrumbs.

Sprinkle bread and remaining cheese over the pasta mixture and bake at 200°C for 15 minutes, or until golden. Serve with a crisp green salad.

Tips

  • Divide mixture between 6 oven proof dishes for individual serves.
  • Substitute the vegetables with a packet of your children’s favourite frozen vegetables for a quick solution to fussy eaters.
  • Use canned corn and/or frozen green peas, grated carrot or other vegetables that your children will eat.
  • Substitute the tuna with salmon if preferred.

*Devondale Organic Tasty Cheddar Cheese is low in lactose, if you are highly sensitive the cheese can be omitted from this recipe.
