Skinny White Sauce
Makes 2 cups
Ingredients
- 2 cups Liddells Lactose Free Long Life Skim Milk
- 1 ½ tablespoons cornflour, blended with a little milk to form a paste
- flavouring of choice, see below
Creamy Sweet Chilli and Coriander Sauce
- 2 cups Skinny White Sauce
- 1/3 cup sweet chilli sauce
- 1/3 cup finely chopped fresh coriander
- salt, to taste
Three Herb and Caper Sauce
- 2 cups Skinny White Sauce
- 2/3 cup finely chopped fresh herbs (basil, chives, parsley)
- 1 tablespoon tiny capers (or regular capers, chopped)
- grated rind of 1 lemon
- lemon juice, to taste
- salt and freshly ground black pepper, to taste
Seeded Mustard and Garlic Sauce
- 1 teaspoon olive oil
- 2 cloves garlic, crushed
- 2 cups Skinny White Sauce
- 2 tablepoons seeded mustard
- lemon juice, to taste
- salt and freshly ground black pepper, to taste
Method
- Combine milk and cornflour mixture in a saucepan and cook over medium heat, stirring with a wooden spoon until slightly thickened.
- Stir in flavouring of choice and serve over vegetables, fish, chicken or with bbq meats.
Creamy Sweet Chilli and Coriander Sauce
- Combine all ingredients together.
- Serve warm over steamed asian vegetables, chicken kebabs, prawns or fish.
Three Herb and Caper Sauce
- Combine all ingredients together.
- Serve over char-grilled salmon, chicken or prawns. This sauce is a great low-fat alternative to mayonnaise or tartare sauce.
Seeded Mustard and Garlic Sauce
- Heat oil in a heavy based saucepan, add garlic and sauté 1 minute.
- Add remaining ingredients and season to taste.
- Serve warm over steak, roast chicken, burgers or char-grilled pork fillets.
