Ingredients

  • 4 chicken marylands
  • 4 wooden skewers

Spicy Yoghurt Marinade:

  • 1 x 200g tub Liddells Lactose Free Plain Yoghurt
  • 2 cloves garlic, crushed
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon ground turmeric
  • 2 teaspoons freshly grated ginger

Coconut and Lime Raita:

Method

  1. Combine Spicy Yoghurt Marinade ingredients and with clean hands mix in chicken until coated, allow to marinate for at least 1 hour.
  2. Combine Coconut and Lime Raita ingredients and refrigerate until required.
  3. Skewer each maryland from the top of the drumstick through the thigh. Place chicken in a roasting dish and roast at 200°C for 40-45 minutes or until cooked through. Serve chicken with Coconut and Lime Raita
