Spicy Yoghurt Roasted Chicken with Coconut and Lime Raita
Serves 4
Ingredients
- 4 chicken marylands
- 4 wooden skewers
Spicy Yoghurt Marinade:
- 1 x 200g tub Liddells Lactose Free Plain Yoghurt
- 2 cloves garlic, crushed
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- 1 teaspoon ground turmeric
- 2 teaspoons freshly grated ginger
Coconut and Lime Raita:
- 1x 200g tub Liddells Lactose Free Plain Yoghurt, extra
- 1/4 cup shredded coconut, toasted
- Finely grated rind and juice of 1 lime
Method
- Combine Spicy Yoghurt Marinade ingredients and with clean hands mix in chicken until coated, allow to marinate for at least 1 hour.
- Combine Coconut and Lime Raita ingredients and refrigerate until required.
- Skewer each maryland from the top of the drumstick through the thigh. Place chicken in a roasting dish and roast at 200°C for 40-45 minutes or until cooked through. Serve chicken with Coconut and Lime Raita
