Ingredients
140g Liddells lactose free vanilla bean yoghurt |
⅓ cup rolled oats |
10 almonds chopped |
1 tablespoon pepitas |
¼ cup chopped strawberries |
1 tablespoon blueberries |
½ teaspoon caster sugar |
2 teaspoons lemon juice |
Mint leaves |

Directions
Step 1
In a bowl combine blueberries, sugar and lemon juice. Set aside for 10 minutes..
In a small bowl mix together oats, almonds and pepitas.
In a glass layer the parfait with half the yoghurt followed by half the oat mix and half the berry mixture.
Repeat the layers and top with fresh mint to serve.
