Ingredients
| 500g of lean mince |
| 400g of four bean mix |
| 1 tablespoon of garlic Extra Virgin Olive Oil |
| 1 tablespoon of chilli Extra Virgin Olive Oil |
| Taco seasoning (packet) |
| Microwave rice cups (1/2 to 1 per bowl) or cook your own rice |
| Salads of choice (lettuce, carrot, cucumber, capsicum, tomato medley, purple cabbage) |
| Tin of Corn kernels (200g) |
| Avocado |
| 4 tablespoons of Liddells Shredded cheese |
| 100g butter substitute, melted |
| Coriander |
Directions
Heat Garlic and Chilli Extra Virgin Olive Oil in a panCook mince on medium-high heat for 3-4 minutes until starts to brown, season with salt and pepper
Add four bean mix & seasoning as per instruction on seasoning packet.
Once combined turn down to medium heat and simmer for 5-10 minutes
Cut up salad and warm rice in the microwave
In a bowl place rice (¼ of bowl), salad (½ of bowl) + mince & bean mixture ¼ of bowl
Top with 1 Tbsp Liddells Lactose Free shredded cheese & ¼ avocado per bowl
