Yoghurt Parfait

Ingredients

140g Liddells lactose free vanilla bean yoghurt
⅓ cup rolled oats
10 almonds chopped
1 tablespoon pepitas
¼ cup chopped strawberries
1 tablespoon blueberries
½ teaspoon caster sugar
2 teaspoons lemon juice
Mint leaves

Directions

Step 1

In a bowl combine blueberries, sugar and lemon juice. Set aside for 10 minutes..

In a small bowl mix together oats, almonds and pepitas.

In a glass layer the parfait with half the yoghurt followed by half the oat mix and half the berry mixture.

Repeat the layers and top with fresh mint to serve.
